Effect of Storage Temperature and Reconditioning on the Processing Quality of Potato (Solanum tuberosum L.) Tubers

Abstract

The present study was carried out to investigate the effect of storage temperature (4, 10 and 25¡É) on the processing quality of six major potato cultivars in Korea. In addition, the effect of reconditioning according to storage temperature on the potato processing quality also investigated. In spite of the lower sugar accumulation, storage at 25% resulted in excessive weight loss and sprout growth from the early stage of storage. Although weight loss and sprout growth were effectively retarded, storage at 4 C showed the excessive reducing sugar accumulation, and continuous darkening of chip color. Thus, it is considered that the storage temperature of potato tubers for processing should be controlled at about 10¡É during storage. The reconditioning of potato tubers after storage at 10¡É showed the below 0.25% of reducing sugar being taken as the limit of acceptability until 150 days after storage. Although reducing sugar content of potato tubers reconditioned after storage at 4% diminished significantly compared with that obtained before reconditioning, their content could not be diminished below 0.25% from the early stage of storage. Difference in reconditioning effect among cultivars was not significant.
